Tuscan Quinoa Minestrone
COOKING IS SIMPLE!
1 Bag (40 oz.) Path of Life Tuscan Quinoa Blend, cooked according to package instructions
¼ Cup Olive Oil
3 Red Bell Peppers, diced
5 Quarts Chicken or Vegetable Broth
1.5 Quarts Marinara Sauce
Optional: Fresh Basil, Parmesan Cheese
Heat oil in a medium saucepot over medium heat. Add pepper and cook 5 minutes.
Stir in broth and marinara sauce. Simmer for an additional 5 minutes.
Add Tuscan Quinoa Blend and simmer an additional 5 minutes. Transfer to serving bowls and garnish with basil and Parmesan, if desired.
