Moroccan Spiced Grains with Mint and Carrots &



  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1 pound regular or rainbow carrots, peeled, sliced diagonally 1/4-inch thick
  • 1 tablespoon fresh lemon juice
  • 4 cups hot, cooked 5 Grain blend
  • 1/3 cup thinly sliced fresh mint
  • 1/4 cup chopped parsley
  • 1/4 teaspoon ground black pepper
  • fresh mint leaves, optional



  1. Heat butter and oil in a large skillet over medium heat. Add garlic: saute 30 seconds. Add cumin, coriander, and salt; saute 30 seconds or until fragrant. Add carrots; saute 3 minutes or until carrots are crisp-tender. Remove pan from heat. Stir in lemon juice.
  2. Transfer carrot mixture to a large bowl; stir in hot 5 Grain blend, mint, parsley, and pepper. Add salt to taste. Serve garnished with mint leaves, if desired.


Yield: 6 cups
