Tortilla Soup &

COOKING IS SIMPLE!

Ingredients

  • 1 Bag (10 oz.) Path of Life Cilantro Lime Rice Blend, cooked according to package instructions
  • 2 Cups Yellow Squash, sliced into 1/4” half moons
  • 2 Cups Vegetable Broth
  • 1 Cup Fresh or Frozen, Corn Kernels
  • 1 (14.5 oz) Can Tomatoes with Green Chilies, diced
  • 2 Teaspoons Chili Powder
  • ¼ Teaspoon Salt
  • Vegetable Cooking Spray
  • Optional: Tortilla Strips, Cilantro, Radishes, Queso Fresco, Hot Sauce

instructions

1. Heat a large pot lightly coated with cooking spray over medium-high heat. Add squash; saute 5 minutes or until crisp tender.
2. Stir in broth, corn, tomatoes, chili powder and salt. Bring to a simmer; cook 5 minutes.
3. Stir in Cilantro Lime Rice Blend and cook 1 minute. Divide among 4 bowls and garnish with optional toppings as desired.
