1 bag 2.5 lbs (about 11 cups) Path of Life Southwest Mango Quinoa
4 soft-boiled eggs, halved
2 avocados, diced
Chopped fresh cilantro (optional)

instructions
Cook Southwest Mango Quinoa according to package directions. Divide evenly into four serving
bowls.
Top quinoa with eggs, avocado and cilantro, if desired.
