Heat butter and oil in a large skillet over medium heat. Add garlic: saute 30 seconds. Add cumin, coriander, and salt; saute 30 seconds or until fragrant. Add carrots; saute 3 minutes or until carrots are crisp-tender. Remove pan from heat. Stir in lemon juice.
Transfer carrot mixture to a large bowl; stir in hot 5 Grain blend, mint, parsley, and pepper. Add salt to taste. Serve garnished with mint leaves, if desired.
