Chef Tip: Stir in cooked, sliced (meatless or regular) sausage!
1. Heat oil in a large saucepan over medium-high heat. Add zucchini and celery; saute 3 minutes or until vegetables are crisp-tender.
2. Stir in broth and chickpeas. Bring to a simmer and cook 5 minutes.
3. Add Mediterranean Quinoa Blend and spinach: cook 1 minute or until spinach is wilted and soup is heated through.
4. Garnish with optional toppings, if desired.
