Ingredients

  • 1 Bag (40 oz.) Path of Life Saffron Rice Blend, cooked according to package instructions and cooled to room temperature
  • 32 oz feta cheese
  • 2 cups sour cream
  • ½ cup + 1 tbsp olive oil, divided
  • 8 pita breads cut into 8 triangles each and toasted if desired
  • Mixed, fresh vegetables

Instructions
1. Combine the feta, sour cream, and ½ cup olive oil in a food processor. Process until smooth. Transfer to a bowl with a spatula. Drizzle with the remaining tbsp oil.
2. Place the rice blend in a bowl and set on a platter or board along with the whipped feta. Arrange the remaining ingredients around the bowls and serve.
