Heat a large skillet over high heat until very hot. Add tomatoes and cook undisturbed 1-2 minutes or until charred. Stir and cook an additional 1 minute. Stir in garlic and olive oil. Cook an additional 1 minute or until garlic is fragrant. Season to taste with salt and pepper. Set tomatoes aside.
In a clean pan, cook bacon over medium-high heat 10-12 minutes or until crisp. Drain bacon leaving 2-3 tbsp of drippings in the pan. Add shallots and cook 10-20 seconds or until fragrant. Add 5-Grain Blend. Cook an additional 6-8 minutes or until heated through, stirring frequently. Stir in spinach, Parmesan and half the bacon.
Transfer grain blend to serving plates. Top with remaining bacon and tomatoes. Sprinkle with shaved parmesan and torn basil leaves, if desired.
