Grilled Chicken Pulse Mélange Salad &

Ingredients

  • 1 lb boneless, skinless chicken breast, pounded to ½-in. thickness
  • 2 tbsp olive oil
  • Sea salt and ground black pepper, to taste
  • 6 cups arugula salad mix
  • 2 cups Path of Life Pulse Mélange, cooked according to package direction and cooled completely
  • 1/2 cup Italian dressing

  1. Heat grill over medium heat. Brush chicken with olive oil and season with salt and pepper. Grill 5 minutes per side or until internal temperature reaches 165°F. Cool completely and dice into ½-in. pieces.
  2. Combine salad mix, Pulse Mélange and chicken in a medium mixing bowl. Mix well. Transfer to a serving platter and serve with dressing.
