Chicken Niçoise Quinoa Salad &

Ingredients

  • 1 bag 2.5 lbs (about 12.5 cups frozen) Path of Life Mediterranean Quinoa
  • 2 cups diced cooked chicken
  • 2 cups diced tomatoes
  • 1 cup niçoise or Kalamata olives
  • 4 hard-boiled eggs, cut into quarters
  • Balsamic or red wine vinaigrette (optional)

instructions

  1. Cook Mediterranean Quinoa according to package directions and cool to room temperature.
  2. Transfer quinoa to serving plates and top with chicken, tomatoes, olives and eggs. Drizzle with
    dressing, if desired.
