Ingredients

  • 1 bag 2.5 lbs (about 12.5 cups, frozen) Path of Life Mediterranean Quinoa
  • 2 cups (about 8 oz) sliced salami
  • 1 large jarred roasted red pepper, sliced
  • 1 cup sliced green olives
  • 1/2 cup Italian dressing

instructions

  1. Prepare Mediterranean Quinoa according to package instructions. Cool to room temperature.
  2. Combine Mediterranean Quinoa, salami, roasted pepper and olives in a large mixing bowl.
    Divide into four bowls. Serve with Italian dressing.
